First, I’m sharing Dry Garlic chicken recipe. Also note that the pungency can be adjusted according to one’s preference. I personally like a little pungent but you can definitely reduce the red chili powder and also eliminate using the green chilies. Also worth mentioning here that garlic chicken can be made by both boneless chicken and also chicken with bones. When making it as an appetizer try with boneless chicken, and when you are trying garlic chicken gravy use chicken with bones.

Ingredients for Chicken Garlic Dry

  1. Boneless Chicken – 2 lbs. ( medium pieces)
  2. Yogurt – 2 tbsp.
  3. Onions – 1 medium size (finely sliced)
  4. Curry leaves – 10/15
  5. Cumin – half a teaspoon
  6. Black pepper powder – half a tsp
  7. Red chilies – 5 whole
  8. Garlic – 10 cloves
  9. Ginger – half inch piece
  10. Vinegar – 1 tsp
  11. Salt – as per taste
  12. Oil – half a cup ( for cooking)

For Garnishing

  1. Fresh chopped coriander leaves
  2. Onion wedges
  3. Lemon

Step by step guide to make chicken garlic dry

Step 1 – Marinate the boneless chicken pieces in yogurt, salt and black pepper powder. Marinate at least for four hours, for better results marinate the chicken overnight.

Step 2 – To prepare the sauce – Blend whole red chilies, garlic cloves, ginger piece, vinegar and little salt together. Make a smooth paste.

Step 3 – In a non-stick pan heat oil. Add the cumin seeds and curry leave, once they start to splutter add the finely sliced onion.

Step 4 – Once the onions are golden brown, add the marinated chicken pieces. Fry them in high heat, till the moisture evaporates.

Step 5 – Add the blended mixture, mix it well with the chicken. Keep stirring the chicken while frying it on high flame for a couple of minutes.

Step 6 – Lower the flame and add little water, cover the lid and let the chicken cook till it’s tender. Boneless chicken is fully cooked in 20 to 25 minutes.

Step 7 – Dish out the chicken garlic in a dish and garnish it with coriander leaves, onion and lemon wedges.

Chicken Garlic with gravy Ingredients

  1. Chicken – 2 lbs. (with bones)
  2. Onions – 2 medium size (finely chopped)
  3. Curry leaves – 10/15
  4. Garlic cloves – 20
  5. Ginger – 1 half inch piece finely sliced
  6. Fennel seeds – 1/2 tsp
  7. Red chili powder – 1 tsp
  8. Turmeric powder – a pinch
  9. Garam Masala powder – 1/2 tsp
  10. Cumin powder – 1/2 tsp
  11. Coriander powder – 2 tsp
  12. Yogurt – 4 tbsp.
  13. Salt – as per taste
  14. Oil – 1 cup for cooking
  15. Fresh coriander leaves – finely chopped for garnishing

Marinate the chicken

Wash the chicken pieces and once the excess water drains out from the sieve, place the chicken in the mixing bowl. Add yogurt, red chili powder, turmeric powder, cumin powder, coriander powder, Garam Masala powder and salt. Mix them all together. Let the marination sit for at least 4 hours. For better taste marinate the chicken overnight.

H2: Step by step easy chicken garlic curry recipe

Step 1 – In a non-stick pan heat oil. Add the fennel seeds, finely chopped onions, curry leaves, garlic cloves and ginger in it.

Step 2 – Once the onions are golden, dish everything out and let it cool. Grind all together into a fine smooth paste.

Step 3 – In the same oil, add the ground paste and sauté it. Now add the marinated chicken. Let it fry on high heat till the moisture evaporates. Keep stirring it, so that it doesn’t get burned.

Step 4 – When the oil separates, add enough water for the chicken to get tender. Also adjust the salt at this step. Lower the heat and cover the lid. Let it cook for at least 30 to 40 minutes.

Step 5 – Once the chicken is tender, adjust the thickness of the gravy as per your choice. Generally chicken garlic curry is little thick to be enjoyed with parathas, but you can also make it little soupy to have it with rice.

Step 6 – Dish out the delicious chicken garlic and garnish it with chopped coriander leaves.
