Step 1 – In a mixing bowl add yogurt, ginger garlic paste and all the powdered spices. Blend them well with the wire whisk. Check the salt and pungency here and you can increase the quantity of spices accordingly.
Step 2 – Gradually add the chicken pieces in the marination bowl and make sure to fully cover the chicken with the spice mixture. Squeeze the lemon juice also in it. Let it sit for 2 to 3 hours. I personally prefer to marinate the chicken overnight as the flavor is fully infused. But minimum of 3 hours marination will also work.
Step 3 – Heat oil in a wok for deep frying. Add the all-purpose flour, corn flour and beaten eggs in the chicken marination. Mix them thoroughly.
Step 4 – When the oil is hot reduce the flames to medium high. Now carefully lower the chicken pieces 3 to 4 at a time. Turn the side with the help of a tong. Let the chicken fry on medium flame for 5 to 7 minutes.
Step 5 – When the chicken pieces are brown in color take them out and place them in a dish. Keep frying the chicken in the same manner. 3 to 4 pieces at a time in the wok will ensure that heat is equally distributed and the chicken will be fully cooked from inside.
Step 6 – Place the entire fried chicken pieces in the dish. Now sprinkle the amchoor powder and chaat Masala over the pieces. The crispy and very delicious chicken fry is ready to be served.
