How to make Chicken Korma? A Step by Step recipe.

Though the list of ingredients must be looking intimidating, but the steps involved in making the Chicken Korma are pretty simple and straight forward:

Step 1 – Heat oil in a pan, add finely chopped onions and start frying them. Once they are beautifully golden brown, remove them in a plate and let them cool.

Step 2 – Grind the onions and soaked chopped cashews in a fine paste. Add water if needed to grind these two in a smooth paste.

Step 3 – In the same oil add chicken pieces and start frying them. Add ginger garlic paste and keep on frying it. Once the chicken start to turn pinkish brown add the tomato paste. Keep frying the chicken till oil starts to separate.

Step 4 – In a bowl put yogurt and add red chili powder, cumin powder, coriander powder, fennel powder and cardamom powder. Whisk it well.

Step 5 – Add the onions and cashews paste in the chicken and also add the yogurt mixed with spices and salt in the chicken. Keep frying it. At this point add water while frying so that the cashew paste doesn’t stick to the bottom of the vessel.

Step 6 – Once the spices are fried enough with the chicken add enough water and cover the lid. Now simmer the flames to medium low and let the chicken cook till it is soft and tender.

Step 7 – Now that the chicken is tender and oil is separate, adjust water to the desired thickness of the gravy, also check the salt and adjust it to the taste. Add Garam Masala, Kashmiri Red chili Powder and cream in the chicken gravy and let it cook on low flames for another 10 minutes.
